麻辣水煮鱼的做法-图解

麻辣水煮鱼的材料:

新鲜淡水鱼1条、黄豆芽或绿豆芽1把、生菜1棵、芹菜2根、香菜2根。

麻辣水煮鱼的调料:

花椒1大把  干辣椒段1大把  盐1小勺  鸡精1小勺  胡椒粉1小勺  淀粉1大勺  蒜瓣5粒切片  姜片10片  葱段6段  料酒50毫升  郫县豆瓣酱1大勺  辣椒粉1大勺  蛋清1个  清水500毫升

麻辣水煮鱼

麻辣水煮鱼的做法:

1、把鱼片成薄薄的鱼片,然后用胡椒粉、蛋清、料酒、5片姜片、3段葱、淀粉和盐来腌制20分钟

2、炒锅内倒入适量油烧热,然后放入剩下的姜片、蒜片、1半的花椒和1半的干辣椒段爆香,待香味出来后放入豆瓣酱一起翻炒

3、然后往锅内倒入约500毫升清水(1碗左右),放入鱼骨鱼头一起煮至沸腾,沸腾后将鱼片放入烫2分钟,并放入剩下的葱段,即可关火

4、在另一个大容器里放入豆芽、生菜和芹菜(我用的是绿豆芽,直接放入即可,如果是黄豆芽请事先用开水焯一下,另外我家没有大容器,所以我就用砂锅来装:)

5、将烫好的鱼片等全部倒入装了蔬菜的大容器里,再在表面撒上辣椒粉

6、把炒锅洗干净然后倒入较多油烧热,放入剩下的一半花椒粒和干辣椒爆香,但是注意不要把干辣椒烧糊哟

7、将麻辣油倒入鱼片上,然后放入香菜即可

麻辣水煮鱼

地瓜的贴心建议:

1、鱼片尽量不要切厚,但也不能太薄哟,太厚了烫的时间长口感则差,太薄则容易碎

2、天气热的时候可以把鱼片放进冰箱腌制,待别的都准备好了再拿出

3、烫鱼片的时候用大火,1、2分钟即可,时间久了口感较差

4、如果你使用的是黄豆芽,事先要烫熟哦,生菜和芹菜易熟,不用焯水
