担仔面的来历和做法

担仔面是一种发源于台南地区的小吃,其全名亦可称为度小月担仔面。其发源时间可能为清朝时期,由于台南临海,故许多人家以捕鱼为业,但是台南夏季七、八月份时常有台风侵扰,风雨加交导致不易出海捕鱼,故生计顿时艰困,故称台风来袭频繁、生计维持不易的月份为小月。因此有些渔家在无法出海捕鱼时候,就改卖面食以维持生计、度过小月,而后渐渐产生「度小月担仔面」这道美食。

  度小月担仔面现今在台南地区有许多店家,这道面食的主要成份为:油面、豆芽菜、香菜、虾仁、少许汤汁以及独门肉燥。

  担仔面又有人叫“肉臊面”,肉臊其实是卤肉的一种,现在成为了台湾南部的一种经典小吃。台湾的卤味、特别是卤肉,是扬名海外的,肉臊就是以纯瘦肉的卤肉,用较甜的卤汁卤过,再切丁、加上新鲜蒜瓣一起炒,非常的香。炒好以后加入面中,就是担仔面了。特色:特点便是里面的肉臊是用木炭火烤的。按照现在的做法,担仔面里面一般会加一只虾进去,而肉臊是用卤肉来爆炒而来。 原料:肉臊(纯瘦肉的卤肉),蒜,油面.值得注意的是,担仔面的面又不是一般的面条,而是一种叫做“油面”的面条,这种圆形的面条口感爽滑弹牙,相互不粘连,很能与肉臊的口感相搭配。

担仔面做法

1.担仔面食材内容:油面、豆芽菜、香菜、虾仁、黑醋、蒜泥、猪肉沫、酱油
